This 8in western chef knife, forged from a piece of high carbon 80crv2, is completed with a stunning ultra fine spalted quilted maple handle. One of the coolest pieces of wood I have had the pleasure of using to date. This knife is slightly thicker than some of my knives making it a perfect all around workhorse in the kitchen.
